Carmel’s Aubergine, recently awarded two prestigious Michelin stars under the direction of chef Justin Cogley, is known for its menu celebrating seasonality and creativity—with a beverage program to match. We’re honored to have lead sommelier John Haffey (himself named Michelin Guide's 2023 Sommelier of the Year in California) and bartender Daya Jackson, collaborate to craft a holiday cocktail just for us. Inspired by Haffey’s love of Chartreuse (something Aubergine’s drinks are known for) and Jackson’s love of dry Curaçao, the bourbon concoction highlights Aubergine’s nocino, housemade each year using fresh green walnuts. It’s the perfect complement to the season. “The holidays are such a busy time of the year. It’s important to have something that forces you to slow down, take time and contemplate,” says Haffey, who suggests enjoying this cocktail in a cozy setting with a partner or a close friend.

“Home for the Holidays”
1.25 oz bourbon
0.5 oz Yellow Chartreuse
0.5 oz 10-year-old Cognac
0.25 oz dry Curaçao
1 bar spoon of nocino (1/6 of an ounce)
2 dashes Angostura bitters
Makes: 1
Assemble all ingredients in a cocktail mixing glass, add ice and stir for approximately 15 seconds. Strain into a rocks glass with a large ice cube. Garnish with an orange twist.
